Slice each chicken breast in half horizontally to create four thin cutlets. Season both sides with salt and pepper.
Set up three shallow dishes . One with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese. Dredge each chicken cutlet in flour, dip in egg, and coat with the breadcrumb mixture.
Heat olive oil in a large skillet over medium-high heat. Fry the chicken cutlets until golden brown and cooked through about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce in a baking dish. Place the fried chicken cutlets on top then spoon more marinara sauce over each cutlet. Sprinkle with mozzarella cheese.
Bake in the preheated oven until the cheese is melted and bubbly about 15-20 minutes.
